Rum Cream
The only way to top a Christmas Pudding.
| 125 g | cream cheese | 
| 1 C | icing sugar | 
| 30 g | butter | 
| 1 | egg | 
| 1/4 t | salt | 
| 1 t | lemon juice | 
| 300 ml | thickened cream | 
| 160 ml | aged or spiced rum | 
Have cream cheese and butter at room temperature.
- Beat cream cheese until light and fluffy.
- Add sifted icing sugar, butter, egg and salt. Mix well.
- Beat in lemon juice.
- Beat cream and 100 ml of rum in another bowl.
- Mix cream into mixture and taste.
- Add additional rum in 20 ml increments to taste.
- Refrigerate for several hours before serving.
